Lettuce Eat is now open in the Longview Mall, offering customizable salad in a Chipotle-style serving line.

April and Ron Thompson opened the restaurant in the center of the mall at the end of the food court hallway.

The couple has operated other restaurants, including a taco restaurant and a sushi and hibachi restaurant in Henderson, where they previously lived. They also started the Chicken Mafia food truck, which April性视界传媒檚 parents have since taken over.

性视界传媒淲hile we were coming up with our concept (for the mall restaurant), we were trying to come up with a name, and my daughter Makayla said, 性视界传媒楲et性视界传媒檚 name it Lettuce Eat and rolled over laughing,性视界传媒 性视界传媒 Ron Thompson said. 性视界传媒淲e all started laughing and thought it was too funny to pass up.性视界传媒

They anticipate moving to a larger location if the concept is successful.

Lettuce Eat also serves wraps, soups and energy drinks with 性视界传媒渁ll natural green coffee beans性视界传媒 and several different kinds of teas and flavored lemonades.

As a joke, they also started a 性视界传媒渃heat day性视界传媒 on Fridays when they added chili cheese dogs to the menu. It was so popular, every day is cheat day now, with chili cheese dogs, elote corn in a cup and red beans and rice, as well.

Lettuce Eat is open seven days a week, 11 a.m.-7 p.m. Monday-Thursday, 11 a.m.-8 p.m. Friday and Saturday and noon-5 p.m. Sunday.
